Ingredients for Carrot Cake Energy Balls
- 1/2 cup cashews
- 1/2 cup walnuts
- 1/2 cup of raisins
- 1 cup medjool dates, pitted
- 1 tsp ground cinnamon
- 1 cup unsweetened coconut flakes.
- 1 cup grated carrots (about 2 medium-sized carrots)

This coconut oil energy ball recipe is easy and delicious! It’s packed with health benefits, antioxidants and probiotics which will boost your immune system. As always it’s allergy friendly and vegan too! These coconut oil balls are also gluten free so everyone can enjoy them.
Ingredients for Coconut Oil Energy Balls:
2/3 cup almond butter
1/2 cup shredded, unsweetened coconut
6 medjool dates, pitted
1 1/2 tablespoons coconut oil (solidified)
1 1/2 tablespoons flax seeds, ground finely with a coffee grinder or blender.
Other ingredients you can add to make the energy balls sweeter: vanilla extract, honey or agave nectar. You can also try adding more shredded coconut if you want them to be even sweeter. You can also try adding in some protein powder or wheat germ to boost the protein content. Substitute the medjool dates with regular pitted dates if they’re not available.
How to make Coconut Oil Energy Balls
In a food processor combine the dates, coconut oil and flax seeds. Blend until creamy and you have a flour like texture. Transfer to a bowl and set aside. In a separate bowl combine the almond butter, shredded coconut, salt and protein powder. Mix well then add the date-coconut mixture and mix together. Roll into 1-inch balls and place on an oiled tray or in an airtight container. (You can also use a silicone muffin tray).
VARIATIONS: Instead of coconut oil you can substitute with extra virgin olive oil or even avocado oil (for nutritional benefits).
